Step 1

Preheat the oven to 400ºF. Prepare your pie crust in a pie plate and spread the dijon mustard evenly in the bottom of the crust.

Step 2

Slice the zucchini and onion into thin slices and sauté in butter until tender-crisp but not soft.

Step 3

Combine the eggs, parsley, salt, garlic powder, basil, oregano, and black pepper in a bowl. Mix well.

Step 4

Add the sautéed zucchini and onions and the shredded mozzarella cheese to the egg mixture and stir gently.

Step 5

Spread the mixture of sliced zucchini and onion, shredded cheese, eggs, herbs, and spices in the pie crust.

Step 6

Bake the quiche at 400ºF for 35-40 minutes or until set. Let stand for 5-10 minutes before slicing.
