Southwest Chicken Corn Chowder

This cheesy Southwest chicken corn chowder is a super easy weeknight meal. If you have leftover cooked chicken, you can have this hearty corn chowder ready in under 30 minutes.

Gather Your Ingredients

Sauté chicken in a large soup pot until chicken is cooked through.

Step 3

Add minced garlic and continue to sauté until garlic is tender.

Step 4

Add cheese, green chilies, creamed-style corn, and half and half. Cook over medium heat, stirring regularly, until the heated through and cheese is melted.

Step 5

Add diced pimientos. Stir while cooking over medium heat until heated through.

Step 6

Garnish with fresh chopped cilantro 0r your choice of garnishes and serve with tortilla chips.
