Thai Pasta Salad with Sesame Ginger Dressing

Bursting with color and flavor, Thai Pasta Salad with Sesame Ginger Dressing is  full of veggies, pasta and peanuts with a delicious ginger dressing.

Step 1

Gather Your Ingredients

Salad: – diced cucumber – diced red bell pepper – shredded carrots – whole cocktail peanuts – finely chopped cilantro – steamed edamame – tri-color rotini

Dressing: – vegetable oil – rice wine vinegar – tamari or soy sauce – Dijon mustard – freshly grated ginger – honey – toasted sesame oil – sriracha hot sauce

Step 2

Combine all of the dressing ingredients and blend for 1-2 minutes until the mixture has emulsified.

Step 3

Cook the pasta according to the package directions. When done, rinse with cold water and drain well.

Step 4

While the pasta is cooking, combine the prepared vegetables, peanuts, cilantro, and edamame in a large bowl.

Step 5

Toss the pasta, vegetables, and peanuts, then add sesame-ginger dressing and stir gently.

Step 6

Cover and refrigerate for 1-2 hours or until ready to serve. If preparing more than two hours in advance, wait to add dressing to salad until 1-2 hours before serving. Serve cold.
