Soup with a sandwich is often relegated to lunch fare, but they make an easy and delicious supper when you are short on time. I'm a big fan of sandwich makers to make a quick meal, and I used mine to make grilled cheese sandwiches to serve with this creamy soup.

🥘 Ingredients
- canned crushed tomatoes
- chicken or vegetable broth
- chopped fresh basil
- sugar
- salt and pepper
- half and half
- shredded Parmesan cheese
- croutons
📋 Instructions
Combine the tomatoes and broth in a sauce pan over medium heat. Stir in basil and sugar and continue heating for 5 minutes, stirring occasionally. Reduce heat; stir in the half and half. Cook, stirring regularly, until soup is hot. Season to taste with salt and pepper, and serve garnished with Parmesan cheese and croutons.
💭 Tips
If you'd like a less creamy soup (as well as fewer calories), you can use less half and half or omit it completely.
