These cheesy Italian Beef Hoagies with red bell pepper and onion are a delicious way to use leftover roast beef.

If you're using leftover roast beef, you only need about 10 minutes to slice and sauté the pepper and onion, and another 2-3 minutes to toast the sandwiches.
🥘 Ingredients
- hoagie rolls
- cooked roast beef
- 1 red bell pepper
- 1 onion
- olive oil for sautéing
- mayonnaise
- salt and pepper
- Italian seasoning
- shredded mozzarella cheese
- pickled hot peppers
📋 Instructions
Sauté the pepper and onion in olive oil until tender.
Spread 1 Tbsp. of mayonnaise on each hoagie roll and top with equal amounts of roast beef, pepper, and onion.
Sprinkle with salt, pepper, and Italian seasoning to taste. Top with mozzarella cheese.
Toast sandwiches open-faced until the cheese melts and roll browns slightly.
Serve warm with pickled peppers if desired.
