This beloved southern favorite is creamy and delicious, and when you have cooked chicken on hand (which you will if you are following the Secrets of a Busy Cook!) it’s easy to make.
2cupschopped, cooked chicken, from freezer or 1 lb. chicken breasts, chopped and sautéed
20ouncescondensed cream of chicken soup
½cuplight sour cream
4ouncesround buttery crackers, like Ritz
1tablespoonpoppy seeds

4ouncesround buttery crackers, like Ritz
2tablespoonsmelted butter
poppy seeds, for garnish
Instructions
Crush the buttery crackers separately.
Combine 2 cups chopped, cooked chicken, 20 ounces condensed cream of chicken soup, ½ cup light sour cream, 4 ounces round buttery crackers, and 1 tablespoon poppy seeds in a large bowl. Mix well and transfer to a greased casserole dish.
Mix together remaining crackers and 2 tablespoons melted butter and sprinkle on top of chicken mixture. Garnish with poppy seeds.
